Cucumber And Date Delight Recipe

For a sweet treat, try this easy hollowed out cucumber appetizer filled with dates and nuts mixture then cut into slices. Quick and easy to make

Prep Time: 15 min      Cook Time: 18 min

Ingredients:

1 English Cucumber, unpeeled, washed
1/2 cup dates pitted, finely chopped
1/4 cup water
1/4 cup pecans or walnuts toasted, chopped
Fresh herbs for garnish

Instructions:

Trim ends of cucumber, cut in half horizontally, remove any seeds and some of the pulp with a melon baller making two hollow tubes.

In a small saucepan bring water to a boil, add dates, reduce heat and simmer 15 minutes; remove from heat and mash to a smooth consistency. Stir in nuts blending well.

Divide mixture in half, stuff into the cucumber tubes, slice 1/4-inch thick, garnish with fresh herbs and serve
